Greek Roasted Chicken with Potatoes

Ingredients

Main Dish:

  • 1 roasting pan
  • Chicken legs and thighs
  • Potatoes (cut into chunks)

Marinade:

  • Lemon (juice)
  • Lots of garlic (chopped/minced)
  • Greek olive oil
  • Salt & pepper (to taste)
  • Red pepper flakes
  • Lots of Greek oregano
  • A pinch of Lawry's seasoning

Additional Toppings:

  • 5 whole garlic cloves
  • Kalamata olives (sliced)
  • Dill (chopped)
  • Parsley (chopped)

Instructions

  1. Preheat the oven to 350°F–400°F.
  2. Place chicken legs and thighs in a roasting pan.
  3. Sprinkle with salt and pepper, then pour some marinade over the chicken.
  4. Add potatoes, garlic cloves, sliced olives, dill, and parsley.
  5. Use your hands to coat and turn the chicken evenly.
  6. Roast in the oven, basting occasionally with the marinade and juices from the pan for added flavor and moisture.
  7. Cook until the chicken is golden and cooked through.
